Avocado, Broccoli and Asparagus Salad
Serves: 4-6 as a side dish

Ingredients
Salad Mix:
1 Avocado cut into chunky pieces
1 head of Broccoli, stalk removed and florets cut into small pieces
10 Asparagus spears blanched
1 Red Onion finely chopped
Feta cheese broken into chunky pieces
1/4 cup dried Cranberries
Dressing:
2 tbsp. Natural Unsweetened Yoghurt
1 tsp Cider Vinegar
2 tsp Runny Honey
1 tbsp. Basil Pesto
Method
Put all of the salad ingredients into a bowl and gently mix together.
Combine dressing ingredients into a small bowl then gently stir through the salad.
Serve with slithered almonds on top (optional)
